Chocolate Brownies

 

110g good dark chocolate,

175g caster sugar,

75g plain flour,

50g butter (cut up into small pieces),

50g pecans/walnuts (roughly chopped),

pinch of baking powder and a pinch of salt,

2 eggs,

1 tsp vanilla extract

Preheat the oven to 180°C, melt the chocolate in a microwave, mix in the butter. Stir until the butter has melted and blended with the chocolate. Beat the eggs together with the sugar and vanilla until fluffy then mix with the chocolate. Fold in the flour and the chopped nuts. Pour the mixture into a greased 20cm (8in.) square baking tray and bake for 20-25 minutes. until a skewer comes out fairly clean (but no longer or they won't be as moist and chewy as they should be). Allow to cool and cut into squares.
