Hickory Chicken

 

Ingredients

2 Chicken Breasts

2 Rashers of Bacon

1 jar of barbecue marinade

Handful of grated cheese

6 Medium Sized Potatoes

3 Medium Sized Carrots

 

 

Directions

Pre Heat the oven to 200 degrees

Wrap the rasher of bacon around the chicken breast and place in a small oven proof dish. Pour in the barbecue marinade so just the top of the breast is exposed and then sprinkle on the grated cheese.

Peel the potatoes and carrots. Put them on to boil separately.

Add the chicken breasts to the oven.

Once the potatoes are soft you need to drain them and replace them back in the dry pan.

Now add a couple of knobs of butter and a handful of grated cheese to the potatoes and mash it.

Now drain the carrots and add to the plate. Add a serving of the mashed potato.

Bring the chicken out of the oven and add to the plate.
