Sausage Surprise

 

 

900g/2lb Potatoes, peeled and cut into chunks

Salt and Black Pepper

450g/1lb Chipolatas

300ml/10fl.oz. Milk

50g/2oz Butter

225g/8oz Cheddar Cheese, grated

½ teasp Freshly Grated Nutmeg

 

 

Preheat the grill to hot. Place the potatoes in a large pan of salted water, bring to the boil and cook for 10-15 minutes until tender. Meanwhile, grill the chipolatas for 15 minutes, turning frequently, until well browned.

Drain the potatoes and set aside. Add the milk to the saucepan, bring to the boil then add the potatoes together with the butter. Mash well with a masher or fork, then beat with a wooden spoon until smooth. Add the nutmeg, salt pepper and 100g/4oz of the cheese and mix well.

Spread the mixture in a shallow flameproof dish then push each chipolata, diagonally, into the mixture so just the tops are showing. Sprinkle with the remaining cheese and grill for 5 minutes until golden and bubbling. Serve immediately.
